Pumpkin is an iconic fall staple. People wait all year long for that pumpkin spice latte fix. I’m here to tell you that you do NOT have to wait for fall to get that rich and tasty flavor onto your menu! This french toast recipe is honestly one of my favorites, and I make it all year long. It’s quick, easy, and approved by even my pickiest eater.

All you have to do is whisk together a quick pumpkin custard, dip and cook the bread slices to golden perfection, and serve with a generous drizzle of maple syrup. You can even get crazy and try topping this with a caramel breakfast syrup and take these from delicious to mind blowingly good.

PUMPKIN FRENCH TOAST INGREDIENTS

Alrightly, so what exactly do you need for this recipe? Turns out, not much. The ingredient list is fairly short and requires mostly pantry staples. Here is what you will need to get started:

  • Eggs: Large eggs work best to give you that perfect custard base.
  • Cream: Ok, so technically you can replace this with milk or half and half. I prefer cream for that super rich flavor, but any milk will work.
  • Pumpkin: Pumpkin puree, not pumpkin pie filling. This is typically found in the baking aisle of most grocers. If you wanted, you could even attempt making your own!
  • Spices: I make my own pumpkin pie spice, but you can find it pre mixed in the spice aisle of grocery stores. OR you can add cinnamon, cloves, nutmeg, and ginger to taste.
  • Bread: This is where you can start to get really creative. I used day old white bread slices, and they worked beautifully. However, you can use almost any bread type for this recipe. Grab what you have on hand and give it a try.

This recipe doesn’t use up a whole can of pumpkin. Use the rest to make pumpkin baked oatmeal!

HOW TO MAKE FRENCH TOAST WITH PUMPKIN

  1. PREP: Preheat a skillet over low/medium heat with a small bit of butter. Whisk together the eggs, cream, pumpkin, pie spice, and vanilla until fully incorporated and smooth.
  2. DIP: Dip the bread slices, one at a time, into the egg mixture being sure to coat each side evenly.
  3. COOK: Place the slices onto the preheated skillet and cook until golden brown on each side, about 1-2 minutes.
  4. REPEAT: Repeat with the remaining bread until all has been cooked.
  5. ENJOY: Slather with butter and syrup then dig in!

What is the best bread to use in French toast?

The short answer? Almost any bread type will work with this easy pumpkin recipe. Here are a few of our favorites:
Brioche– It is thick, sturdy, and still tender. Slice it thick for the best results.
Sourdough– The slight tang you get with this bread helps tone down the sweetness.
French Bread– It is typically thicker and holds up well after soaking in your custard.
Challah– The braided top will give you a stunning finished dish that is sure to impress!
Regular Sandwich Bread– No time to run to the store? No problem! Just use the regular bread you have on hand.

Why is my french toast soggy?

If you find that your french toast is on the soggy side, lower the temperature and cook a tad longer. Most likely the bread has soaked up more of the custard and is taking just a smidge longer to cook.

Can this be made ahead of time?

Serving a crowd or guests and don’t want to be tied to the kitchen? I’ve got you covered! You can make this recipe in advance and keep it warm in the oven until you are ready to serve.
1.Place the cooked french toast onto a baking tray.
2.Keep stored in the oven set to the lowest temperature (some ovens even have a “warm” setting) until ready to serve. This will typically be 170 to 200 degrees.

Can you freeze this recipe?

Place the cooked french toast on a wire cooking rack.
Once it has cooled to room temperature, transfer to a freezer safe zip top bag.
Transfer to the freezer.
Frozen French toast can last up to 2 months if stored properly.
To reheat, place the French toast in the microwave for 20 to 30 seconds. Flip and heat an additional 15 to 20 seconds.

Ingredients

  • 3 large eggs
  • 1/2 cup heavy cream or milk
  • 1/4 cup pumpkin puree
  • 1 teaspoon vanilla
  • 1-2 teaspoon pumpkin pie spice
  • 10 slices thick sliced bread

Instructions

  • Whisk the eggs, cream, pumpkin, vanilla, and pumpkin pie spice in a small bowl that is wide enough to dip your bread. Set aside.

  • Melt a little butter in a large skillet over low/medium heat.

  • Dip the bread into your egg mixture and place in your skillet. Cook until both sides are golden brown.

  • Repeat with remaining bread. Serve warm with butter and syrup.
