Chicken Marsala

If you need a nice, fancy, date night Italian dish to cook, this is the perfect recipe! It is flavorful and easy to make. You can pair it with any carb such as pasta or mashed potatoes with veggies to have a complete meal. The sauce is made with Marsala wine which is a dry and sweet wine which has a 15-20% alcohol content but don’t worry, all of the alcohol will cook out of the sauce. The wine creates a nutty and rich caramelized sauce for the chicken. For this recipe I used boneless, skinless chicken breast but you could use chicken thighs or pork cutlets. Any of these proteins will work perfectly. Split the chicken breast in half and use a meat tenderizer to pound them and make them as thin as possible.

Season the chicken breast with 1 tbsp cajun seasoning and 1 tbsp onion powder.

Add 2-3 cups of flour in a separate bowl and season with 1 tbsp of cajun seasoning, 1 tbsp garlic salt, 1 tsp black pepper and 1 tsp paprika. Fully coat each chicken breast in the flour.

In a skillet, add 3 tbsps of butter and 1 tbsp olive oil. Once melted, pan fry the chicken breast until golden brown on each side.

Once the chicken has browned, remove the chicken from pan and set aside. Add 1 tbsp of butter, 1 cup of mushrooms and 1 tsp of minced garlic to the pan.

Add 1 cup of Marsala Wine, 1 cup of chicken stock, 3 dashes of Worcestershire sauce and 1 tsp of fresh parsley.

Add the chicken breast to the pot and cover.

Cook 15-20 minutes on Medium heat or until the sauce thickens.

Taste the sauce and add salt and pepper to taste. Service with mashed potatoes or pasta. ENJOY!

Chicken Marsala

Golden pan-fried chicken breasts cooked with mushrooms and fresh herbs in a rich Marsala wine sauce.

Ingredients

Chicken Marsala

  • 2 Chicken Breasts
  • 4 tbsp butter
  • 1 cup Marsala wine
  • 2 tbsp cajun seasoning
  • 1 tbsp onion powder
  • 1 tbsp garlic salt
  • 1 tsp paprika
  • 1 tsp minced garlic
  • 1 tsp fresh parsley
  • 2 cups flour
  • 1 cup chicken stock
  • 1 cup sliced mushrooms
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 3 dashes Worcestershire

Instructions

  1. Slice the chicken breasts in half.
  2. Using a meat tenderizer, pound the chicken breasts into thin slices.
  3. Season the chicken breast with 1 tbsp cajun seasoning, 1 tsp black pepper and 1 tbsp onion powder.
  4. In a separate bowl, add 2 cups of flour. Season the flour with 1 tbsp cajun seasoning, 1 tbsp garlic salt and 1 tsp paprika.
  5. Fully coat each chicken breast with the flour.
  6. In a skillet, add 3 tbsps of butter and 1 tbsp of olive oil.
  7. Once melted and the pan is hot, add the chicken breast. Cook 5-7 minutes per side or until it is golden brown on each side.
  8. Remove the chicken breast and set aside.
  9. Add 1 tbsp of butter, 1 cup of sliced mushrooms and 1 tsp of minced garlic.
  10. Stir and add 1 cup of Marsala wine, chicken broth and fresh parsley.
  11. Add the chicken breasts back to the pan.
  12. Cover and cook for 15-20 minutes or until the sauce thickens.
  13. Serve with mashed potatoes or pasta and ENJOY!
