I like to serve fries with ketchup, vegan aioli, or vegan ranch dressing on the side.

Crispy potatoes have been a favorite food of mine for a long time, but I’ve always struggled with the grease. Having suffered from IBS, I’ve learned that super-oily foods are not good for me.

How do you square these two realities: you love french fries, but don’t love how they make you feel? Cooking potato wedges in the air fryer!

My air fryer saved the day. In fact, realizing I could cook potato wedges in an air fryer was a game-changer. Now I get deliciously crispy air fried potatoes… without all that grease and oil. That’s a win in my book!

What Potatoes are Best for Potato Wedges?

Russet potatoes are a preferred choice for French fries and wedges because of their starchy, firm texture and low moisture content. This means they’ll create fries that are light and fluffy with a crispy crust (when prepared correctly). Red potatoes and Yukon Gold have a higher moisture content that can yield dense fries that sink in after they’re cooked.

Key Ingredients

You can find the full printable recipe, including ingredient quantities, below. But first, here are some explanations of ingredients and steps to help you make this recipe perfect every time.

Here are the ingredients you’ll need for this recipe, including substitution ideas:

  • Potatoes — I recommend russet potatoes to get the best texture.
  • Olive oil — You can substitute canola oil.
  • Seasonings — I make a seasoning mix made from chili powder, paprika, dried sage, and dried dill.
  • Salt & Pepper — Add salt and pepper to taste.

Note: Always read the instructions for your air fryer to make sure you use it effectively.

Quick Fix Tip

Cut your potato wedges the day before and soak them in water overnight. This extra soaking time removes even more of the starches and makes for even crispier fries in addition to making your work easier on meal day.

How to Serve Potato Wedges

Of course, the best way to serve air fried potato wedges is with ketchup. Here are some other favorite dipping sauces:

  • Believe it or not, potatoes are great dipped in Vegan BBQ Sauce
  • Drizzle this Vegan Nacho Cheese Sauce over your potato wedges
  • Or plain Vegan Cheese sauce is great, too
  • I like to dip my potatoes in Green Hummus

What Makes This Recipe Shine?

  • Soaking the cut potatoes in cold water helps remove surface-level starches, creating a crispy crust
  • Adding seasoning creates interesting, cooked-in flavors and a golden-brown exterior to these potatoes, making them look as delicious as they taste
  • Cooking potatoes in the air fryer is a fast and healthy way to enjoy your favorite side dishes

Are Air-Fried Potatoes Healthy?

Air-fried potatoes are made with minimal oil which makes them healthier than the standard deep-fried french fries.

Are Wedges the Best Shape for French Fries?

Potato Wedges really are the best shape for getting crispy fries. Why? Because there are only three sides to worry about — not four like most four-sided fries. If you cut your fries into elongated cubes (like the shape of many fries), it’s harder and more time-consuming to brown and crisp them on all the sides.

Here’s something else I love about this recipe. Potatoes make a perfect vegan side dish for just about any recipe.

For example, you can fix vegan scalloped potatoes, vegan mashed potatoes, or even these vegan baked potatoes with just about anything. There are so many vegan potato recipes that can be made fast and family-friendly, too!

Ingredients

  • 2 medium russet potatoes washed
  • 2 teaspoons olive oil
  • 1 ½ teaspoons chili powder
  • 1 teaspoon paprika
  • ½ teaspoon dried sage
  • ½ teaspoon dried dill
  • ¼ teaspoon sea salt
  • teaspoon black pepper

Instructions

  • Heat your air fryer to 400°F/200°C.

  • Cut one of the potatoes in half lengthwise. Place cut-side down. Cut each half lengthwise to end arrive at 4 large wedges. Next, cut each wedge in quarters lengthwise, resulting in 16 wedges. Repeat with the second potato (or however many potatoes you want to cook).

  • Transfer the potato wedges to a bowl and add enough water to immerse the potatoes. Soak the potatoes for 10 minutes. Then drain the potatoes in a colander and use a kitchen towel or paper towels to dry off the potatoes.

  • Transfer patted dry potato wedges to a plate and drizzle olive oil over the top. Use your fingers to make sure each potato slice is coated in oil.

  • Combine chili powder, paprika, sage, and dill in a bowl. Sprinkle the spices over oiled potato wedges. Toss to coat.

  • Transfer oiled/seasoned potatoes to air fryer basket. Cook potatoes for 20 minutes, removing the basket and using tongs to "stir" the potatoes so they're even cooked about halfway through. Cook an additional 2 to 3 minutes if necessary.

  • After the potatoes are done, remove them from the air fryer and transfer them to a serving dish (or plates), and season with salt and pepper.
